Shai Hong Cha (晒红茶)
Special red tea from Yunnan, dried in the sun
Shai Hong Cha is not just classic red tea. Its character is determined by the insignificant drying technique: instead of the oven, the leaves are fermented and dried under the exchange of the Yunnan sun. This process (“Sun-dried tea”) preserves the natural power of the tea and allows it to ripen over time, similar to puer. It’s not for nothing that local residents call it “tea that grows.”
